Santa Barbara Salsa

This is what I was raised on. The amounts are mostly proportional to give you a ballpark estimate of what I do. As always, adjust for taste and availability.

Santa Barbara Salsa

Ingredients

  • 3 cups tomatillos
  • 3 cups tomatos
  • 2-3 cups jalapenos or other fresh peppers to taste
  • 4 cloves garlic
  • 1 onion red or vidalia
  • 2 bunches cilantro
  • 3 lemons
  • 1 tbsp salt
  • 1 tsp black pepper freshly ground
  • 1 tbsp cumin
  • 1 tbsp dried oregano
  • 2 tbsp dried basil

Instructions

  • Finely chop the tomatillos, tomatos, jalapenos, cilantro, and onion. Combine them in mixing bowl. Or, use a food processor.
  • Finely dice the garlic and add to the mixing bowl.
  • Add the dry ingredients to the mixing bowl.
  • Squeeze the lemons into a small bowl. Catch the seeds as you squeeze. Discard any seeds that fall into the bowl.
  • Mix thoroughly. Let set for 15-30 minutes. Often times the heat from the jalapenos dissipates over time.
  • Taste and adjust for personal preference.
