Santa Barbara Salsa
This is what I was raised on. The amounts are mostly proportional to give you a ballpark estimate of what I do. As always, adjust for taste and availability.
Santa Barbara Salsa

Ingredients
- 3 cups tomatillos
- 3 cups tomatos
- 2-3 cups jalapenos or other fresh peppers to taste
- 4 cloves garlic
- 1 onion red or vidalia
- 2 bunches cilantro
- 3 lemons
- 1 tbsp salt
- 1 tsp black pepper freshly ground
- 1 tbsp cumin
- 1 tbsp dried oregano
- 2 tbsp dried basil
Instructions
- Finely chop the tomatillos, tomatos, jalapenos, cilantro, and onion. Combine them in mixing bowl. Or, use a food processor.
- Finely dice the garlic and add to the mixing bowl.
- Add the dry ingredients to the mixing bowl.
- Squeeze the lemons into a small bowl. Catch the seeds as you squeeze. Discard any seeds that fall into the bowl.
- Mix thoroughly. Let set for 15-30 minutes. Often times the heat from the jalapenos dissipates over time.
- Taste and adjust for personal preference.
